Ingredients:
1 Tbsp olive oil
1 large yellow onion, diced
3 stalks celery, diced
1 carrot, diced
4 cloves garlic, minced
1/2 lbs lean ground beef
1/2 lbs ground turkey
1 cup dry white wine
1 cup whole milk
1 6-oz can tomato paste
1 14 1/2-oz can diced tomatoes, undrainded
1/4 tsp red pepper
2Tbsp chopped fresh oregano (or 1 Tbsp dried)
1/2 cup fresh parsley, chopped
2 1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup grated parmesan

- In a Dutch oven, over medium heat, heat the oil. Add the onion and saute for 3 minutes.
- Add the celery, carrot, and garlic and cook for 10 minutes more.
- Add the beef and turkey cook until brown.
- Add the wine and the remaining ingredients and simmer for 45 minutes.
